I feel like I’ve been making these Power Bites forever, but keeping them a secret. They are so so so good! The first time I made a power bite was maybe 4 years ago after trying the Peanut Butter Power Balls from Clean Simple Eats. From there, I’ve adapted the ingredients to fit what I like and what I usually have on hand, and that’s how I came up with this recipe for Peanut Butter Cookie Power Bites.
They taste like a gooey balls of fresh cookie dough. Swear!
I love them, my husband loves them, and most importantly my kids love them! So maybe if you don’t love them, then we can’t be friends. JK! You’re gonna love them!
Peanut Butter Cookie Power Bites
Adapted from Clean Simple Eats
Makes 26 servings/ 1 per serving

1 cup natural peanut butter (I like chunky) or almond butter
1/2 cup raw honey
1 serving Cookies & Cream Protein Powder (vanilla works great too)
1-1/2 cups rolled oats
1 tsp vanilla extract
Dash of sea salt
1/4 cup mini dark chocolate chips
In a large bowl, mix all ingredients until well incorporated and a dough-like consistency forms.
Using a cookie scoop or tablespoon, scoops into balls and store in fridge or freezer.
Get creative! Feel free to add in whatever sounds good to you! Chia seeds, ground flax, unsweetened shredded coconut flakes, chopped nuts. So many amazing options!
