Some nights I just don’t have much time to pull a full meal together, and that’s when rotisserie chicken comes to the rescue! It seems to pair perfectly with just about anything, making it the perfect go-to on busy evenings. Take this gorgeous Pineapple Mango Salsa for example. I simply ADORE this stuff.
Not only are the colors beautiful and vibrant, but the flavors are too.
For this dish I served it alongside my rotisserie chicken and some delicious homemade sweet potato fries. A winning combo for any night of the week. But feel free to scoop it up with your favorite plantain chips, serve over a tasty taco salad, or even atop a delicious sweet potato “bun.” So many good ideas! I hope you’ll give it a try.
Pineapple Mango Salsa

- 1/2 fresh pineapple, diced
- 2 mangos, peeled and diced
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 cup purple onion, minced
- 1/4 cup cilantro, minced
- juice of 1 lime
- 1-2 Tbl olive oil
- pinch of salt
In a medium bowl, add all ingredients and toss to combine.
