California Pizza Kitchen ain’t got nothin’ on THIS WHOLE KITCHEN! It’s true that not all pizzas are created equal, and this pizza definitely stands a head above the rest! It’s got a vegetable crust, smothered in yummy, tangy barbecue sauce, and topped with all my favorite things. What’s not to love?

Eating clean doesn’t have to be all steamed broccoli and apples in almond butter. It’s fun to be creative and think outside the box. And what kind of world would this be without pizza? Certainly not any kind of world I’d want to live in.
BBQ Chicken Cauliflower Crust Pizza
Makes 2 Personal Size Pizzas
- 1 head of cauliflower
- 2 eggs
- 1 Tbl dried Italian herbs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- Paleo BBQ Sauce
- mozzarella cheese (omit for Whole30 & Paleo)
- red onion, sliced
- grilled chicken
Grate cauliflower into a large bowl. Heat in microwave for 8-10 minutes. Mix seasonings into cauliflower rice. Make a well in the center and crack in eggs. Beat slightly, then incorporate into cauliflower. Pat mixture into two circles on parchment paper (or lightly oiled cookie sheet) about 1/2″ thick. (Mine were about 10″ in diameter.) Bake at 450 degrees F for about 15 minutes or until edges begin to brown.
Add BBQ sauce, cheese (optional), red onion, grilled chicken and cilantro to cooked cauliflower crust and return to the oven for 5 more minutes or until everything is heated through.
