A 100 gram serving of raw white cauliflower provides 25 calories, is low in fat, carbohydrates, dietary fiber and protein. It has a high content of vitamin C and moderate levels of several B vitamins & vitamin K.
So there you go! Eat the whole plate and you’re well on your way to your daily dose of Vitamin C, B, and K! Eating clean has never been more fun or more delicious! Remember Whole 30 friends, if you’re looking to make this dish compliant, don’t forget to omit the cheese and you’re good to go.
A fun way to get your kids to eat their veggies!
- 1 head of cauliflower (approx 2-3 cups)
- 1 large egg
- 1/2 cup onion, minced
- 1/4 cup red pepper, minced
- 1/2 cup cheddar cheese, shredded (omit for Whole30)
- 1/4 cup parmesan cheese, shredded
- 1/4 cup almond meal
- 1/4 cup cilantro or parsley, minced
- salt and pepper to taste
Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper. Set aside.
Place cauliflower in food processor (my Blendtec worked great too) and pulse until cauliflower becomes “riced.” Microwave cauliflower rice in a medium bowl for 10 minutes.
Once the cauliflower is ready, combine all of the ingredients and season with salt and pepper to taste.
Spoon about 1 tablespoon of mixture in your hands and roll into small oval shaped tots.
Place on the cookie sheet 1/2 inch apart and bake for about 20 minutes, turning halfway through, cooking until golden.
